Chicken Salad Sandwich

This simple recipe makes for a satisfying and flavorful chicken salad sandwich that is perfect for a quick lunch. Feel free to customize the ingredients to suit your taste preferences!

Ingredients

  • 2 slices of bred

  • 100g (~1/2 cup) of cooked chicken breast

  • 1 Tbsp of mayonnaise

  • 50g (~1/4 cup) of bell pepper

  • 14g (~2 Tbsp) of onion

  • 1 Tsp of olive oil

  • Salt and pepper for seasoning (optional)

  • Cilantro for garnishing (optional)

 

Preparation

1. Grab the chicken breast, pat it down with a paper towel, then rub some oil and season it with a dash of salt and pepper (optional).

2. Place the chicken in the air fryer at 360F for 20-25 minutes.

3. Once the chicken is done, take it out of the air fryer and let it cool down for a few minutes before you begin to shred it.

4. While the chicken is cooling finely chop 14g (around 2 tablespoons) of onion. Then dice 50g (approximately 1/4 cup) of bell pepper and set aside.

5. When the chicken is cool enough, shred the chicken with a fork or your hands and measure out 100g (approximately 1/2 cup) of shredded chicken.

6. Add the shredded chicken to the bowl where the cut-up peppers and onions are. Add in the 1 Tbsp of mayonnaise and mix everything until the ingredients are evenly distributed and coated in the mayonnaise.

7. To assemble the sandwich, grab two pieces of bread and toast them, then add the chicken salad mixture to both slices. Spread it evenly and top it off with a few pieces of cilantro.

 

Notes

  • If you don't have an air fryer or prefer other cooking methods for your chicken, feel free to use your favourite technique.

  • No need to worry about salt and pepper – when you mix the chicken with the other ingredients, plenty of flavor comes through.
