Ingredients
1 Medium tortilla
1 Egg
1 Tsp of oil (any oil for cooking)
2 Tbsp Salsa
1 Tbsp Guacamole
1/4 Cup Low Salt Cottage Cheese
1/2 Turkey Pepperoni stick (optional)
Cilantro (optional)
Preparation
1. Grab 1/2 of a turkey pepperoni stick, cut it into small pieces and set it aside
2. Break the egg into a small bowl, add 1/4 of cottage cheese and mix them
3. Pour the egg mixture into a blender and blend the eggs and cottage cheese (this step is optional)
4. Pour the egg mixture back into the bowl, add the cut-up pepperoni pieces and mix everything
5. Heat oil in a small pan and add egg mixture once the oil is hot
6. Cook the eggs for 3-5 minutes or until they are ready
7. Set a tortilla on a plate, spread the guacamole, add the egg, salsa and cilantro to top it off
