Blueberry Bark

INGREDIENTS

  • 1/3 cup of yogurt

  • 1/3 cup of cottage cheese

  • 1/2 cup of frozen blueberries

  • 1 medium-sized square of chocolate

 

PREPARATION

1. Measure out 1/3 cup of yogurt, 1/3 cup of cottage cheese, and 1/2 cup of frozen blueberries.

2. Add everything to a blender and blend until it is evenly smooth, or leave it chunky if you prefer.

3. Line a baking sheet with parchment paper, then pour the mixture onto it and spread it out evenly.

4. Use a knife to cut or shave chocolate into small pieces, then spread them on top of the laid-out mixture.

5. Place the baking sheet in the freezer and allow it to freeze for 40 minutes or until it is frozen.

6. Once it is frozen use a spoon and gently press on it to break it into chunks.

 

NOTES

1. Feel free to use any frozen berries or fruit of your choice.

2. Any type and flavor of yogurt works perfectly; in this recipe, I used plain Greek yogurt.

3. Choose any kind of chocolate you prefer; I opted for 85% dark chocolate.

4. For extra sweetness, consider adding half to one full ripe banana to the mixture.

5. If you're out of cottage cheese, simply add 1/3 cup of yogurt to replace it.
