INGREDIENTS
Base
2 medium potatoes
1/2 cup of yellow peppers
1/4 cup of red onions
1/3 cup of carrots
Sauce
1/2 cup of greek yogurt
1 tsp of salt
1/2 - 1 tsp of black pepper
2 tbsp of dill
1-2 cloves of garlic
1 tbsp of onion powder
PREPARATION
Sauce:
1. In a separate bowl, combine 2/4 cup of Greek yogurt and all the spices.
2. Stir the sauce until well combined.
Potato Salad Base:
1. Peel (optional) and chop 2 medium potatoes into bite-sized cubes.
2. Add your potatoes to a medium-sized pot and add enough water to cover all the potatoes, then let the potatoes boil for 10 to 15 minutes or until they are fully cooked (stab your fork into a piece of potato, if the potato feels soft, it is cooked).
3. Drain the potato water, set the potatoes in a bowl and allow them to cool.
4. While the potatoes are cooling, dice 1/2 cup of yellow peppers, 1/4 cup of red onions, and 1/3 cup of carrots.
5. Add the cut-up veggies to the same bowl with the potatoes.
6. Add sauce and mix everything until it is evenly coated
Notes
1. This salad would pair well with a BBQ, such as BBQ chicken or ribs.
2. Other veggies, such as pickles, cucumber, and radish, would also pair well with this salad.
3. If you don’t have red onion, yellow or green onion are also great alternatives.
4. I like the sauce on the more garlicky end. If you'd like a more pungent garlic taste, add 2 cloves. However, if you don't enjoy it as much, only add 1.
