Gluten-Free waffles

Waffles for breakfast? these gluten-free, sugar-free waffles will satisfy your early-morning waffle craving!

INGREDIENTS

  • 1.5 cup of oats

  • 1/2 tsp of baking powder

  • 1/2 tsp of vanilla extract

  • 2 eggs

  • 1 cup of milk

  • 1/2 cup of yogurt

  • A pinch of salt

  • Butter/Oil for greasing

 

PREPARATION

1. Blend the rolled oats in a blender until they form a fine flour-like consistency.

2. In a large bowl, combine the oat flour, baking powder, and a pinch of salt. Mix them with a spatula or a whisk.

3. Once the dry ingredients are mixed well, add the vanilla extract, yogurt, milk and eggs. Mix them until you obtain a smooth doughlike texture.

5. Preheat the Waffle iron and add some butter or oil to prevent sticking.

6. Once the waffle iron is hot enough, grab a ladle scoop out some batter and evenly spread it in the waffle maker. Wait until the waffle maker indicates that the waffle is ready.

7. Carefully remove the waffles and serve with your favourite toppings such as yogurt, maple syrup, fruit, syrup, or whipped cream.

 

NOTES

1. If you want to ensure that the oats you are using are gluten-free, make sure that the oat package explicitly states they are gluten-free. Oats are naturally gluten-free, but sometimes cross-contamination with gluten can occur, so not all oat packages will state that they are gluten-free.

2. Make sure you wait long enough before you open the waffle maker; otherwise, the waffle may come apart if it isn't fully cooked.

3. Any kind of yogurt will work for this recipe, I used greek yogurt
